October challenge - Nourish Yourself with a Chicken Pizza Party 🍕

This year, every month I will give you a new challenge, that will help you remember our end goal;  To live happier, healthier, and stronger lives.  It will be centered around the Jenergy lifestyle - Community • Health • Fitness.  At the end of the month, you will be amazed how strong and confident you will be after tackling a new challenge.  

For October and FOOTBALL, tailgating and cooler fall weather, I love to make pizza. I load mine with veggies. Here is a recipe that can be easily adapted for everyone in the family or party. It is healthy, full of protein, carbs, and fiber. Let me know how you love it!

So tortilla pizzas. YES OR NO? If you have not had one, you’re missing out. They are crazy easy, easy to customize, and they taste amazing! I am not kidding when I say these super easy.  The longest part is waiting for the oven to get warm. I like to cook the pizza’s in a cast iron skillet. I like the crispy crispy bottom. ENJOY!

Ingredients:

6 oz Boneless skinless Chicken breast

Dash of salt + pepper, crushed red pepper

3-5 tbsp organic basil pizza sauce or BBQ sauce

Tortilla - find one that does not have enriched flour, whole wheat, rice tortilla, Ezekiel

1/2 c Broccoli florets or asparagus *** GO for 1 big handful of spinach or arugula for a life changing experience!

1 Tomato or 1/4 cup Sundried tomato

1/2 c Red onion

1/4 c Cheddar, goat cheese, mozzarella

Garnish with cilantro, parsley, or basil

Instructions: 

Season chicken with salt and pepper and bake at 400 degrees for 20-30 minutes until cooked through. Spray a cookie or pizza sheet with cooking spray.  Place the tortilla shell on the tray. Spread the pizza sauce evenly on tortilla. I like to leave a little room on the outside for crust.  Combine the vegetables, minus the cheese in a bowl and toss Spread evenly on tortilla. Top with the cheese and bake until cheese is melted and gooey.  (about 10 minutes).

Serves 1 large or 2 small.

Tip$ - Serve with a big salad, or top with an egg for breakfast
