Nourish - Katie B Healthy Pizza Night
/ Jeni HouserI have a client and friend who is looking forward to a new relationship with pizza. I had to redefine my relationship with cake in the same manner. I dedicate this recipe to Katie B, so she can have her pizza and eat it too!
Ingredients:
2 pounds cauliflower florets, riced
1 egg, beaten
1/3 cup soft goat cheese, parmesan or mozzarella cheese, grated/shredded
1 teaspoon dried oregano, and/or basil
dash of salt

Directions: Preheat your oven to 400F, then get to work on your crust. Fill a large pot with about an inch of water, and bring it to a boil. Add the “rice” and cover; let it cook for about 4-5 minutes. Drain into a fine-mesh strainer. Then move cauliflower to a towel and squeeze all of the water out. And squeeze some more! Stir cheese, spices, egg, salt, and pepper into cauliflower until evenly incorporated. Pour mixture onto the prepared baking sheet; press and shape into a pizza crust. Bake for 15-30 minutes until crust is brown.
Next top it off with pizza sauce and favorite toppings! Pepperoni, mushrooms, olives, red onion, pepper, cheese, egg, the possibilities are endless!
Tip$ Use a ready made cauliflower pizza crust, they have the at most stores in the freezer isle.
