You will not miss the beef in this recipe. The green beans add a bit of crunch. There are so many ways you can use the meatballs and green beans, scroll down to see my Tip$.
Turkey Meatballs and Green Bean Stir Fry
1 - 1.5 lbs. of ground turkey
3 cloves of garlic minced
1 small onion chopped
1/4 cup rolled oats
1/3 cup fresh (organic) parsley
1 tbsp Italian Seasoning
2 tsp Braggs Amino’s
Dash of black pepper and sea salt
1 15 oz. can (organic) fire roasted tomatoes (great as is!)
Fresh Green Beans – blanched, set in boiling water for 3-4 minutes and set those guys in an ice bath
Olive or grapeseed oil
Dash of honey
Salt and Pepper

Combine all ingredients for meatballs in a medium bowl, first stirring and then using hands to blend. Form meat mixture into about 15 small balls. In a sauté pan over medium high heat, add oil and add the meatballs. Cook for about 8- 10 minutes, or until browned on all sides and cooked through. Add sauce ** tip below. You can also bake the meatballs at 375 degrees for 15-20 minutes and then go do half of your workout!
Green Beans: Add oil to skillet and sauté the green beans until heated and sticky with the honey.

Always double up the recipe. Use the meatballs and sauce with whole grain or gluten free pasta. Use naked meatballs for salads, or snacks! Save some green beans for salads, and sides through the week. $ Go organic on the parsley, conventional on other ingredients. Use tamari or soy sauce vs the Braggs.
