1 Tbsp olive oil
1 cup purple onion
1 lb 90% lean ground turkey, crumbled tofu, black beans, or Beyond Meat crumbles are delicious too!
2 cloves garlic - minced
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp paprika
1/2 cup tomato sauce - organic
1/2 cup low-sodium chicken or vegetable broth
Romaine or Boston lettuce leaves, doubled up, for serving
Toppings: Cheese, bean sprouts, carrot, cilantro, tomatoes, red onion, avocado, jalapeños, water chestnuts
Heat olive oil in a non-stick skillet over medium-high heat. Add onion and saute 2 minutes. Add turkey and garlic, season with salt and pepper, and cook and crumble until cooked through. Add chili powder, cumin, paprika, tomato sauce and broth. Reduce to a simmer and cook about 5 minutes until sauce has reduced. Serve mixture over lettuce leaves with toppings.
